TASTING

Bright amber color with reflections of mahogany. Very powerful, classic nose, exuberant aroma of aged Monastrell, centennial American oak wood, very old wild oak. Very fragrant with aromas of antique furniture and antique oak, varnish and hints of marine iodine. Honey notes. The touches are finely smoked and salty, always returning to the notes of the old sacristy and old wood, very pleasant memories of toffee, coffee, tobacco, carob beans, fig bread and toasted almonds. Moderately raisined, with notes of caramel and mocha. Friendly encounter, not very sweet, soft, and mouthwatering, between acidulous and a little fiery at first. It walks quietly through the center of the mouth, offering notes between caramel and ajerazadas, memories of dried fruit and raisins adjusted to its dryness and a great length that makes the wine eternal in the mouth. Powerful on the palate, concentrated and intense, the alcohol is perfectly integrated, with an elegant and complex finish.

MGWines, has recovered one of the most recognized wines in the world with its own name, Fondillón, a centenary and exclusive oenological jewel of the Alicante Denomination of Origin, with five centuries of history.

Known as "the wine of kings" due to the popularity it achieved in courts all over Europe, Fondillón has made a strong comeback as a true luxury that is now once again available to the public. The Miñano Gómez family, from the MGWines winery group, has devoted itself to recovering this exclusive wine from Alicante, recognized as one of the few spirits in the world that has its own name, and which now comes in a unique and limited edition version: Fondillón 50 years.

With the name "I will always wait for you", in a clear nod to its long production period, this Fondillón stands out for its incomparable and persistent flavor, which is only achieved after aging for half a century in 18th-century American oak barrels. Its elaboration with overripe Monastrell grapes, grown on vines over 100 years old, is expressed with an intense aroma and an amber color with mahogany reflections.

A generous and bottled wine, which has matured and aged in very special conditions in the Bodegas Monóvar of MGWines, and which arrives with a premium presentation thanks to its tortoise bottle and sealing wax closure, signed and numbered by hand. SERVICE/CONSUMPTION

The moment of service is before eating for an important appetizer and in the long table with desserts at a temperature of 16/18C. We will serve it in a white glass, medium, tasting if possible. The Fondillon is an ideal wine to drink alone, in the middle of the afternoon while we meditate, read a good book
or we listen to music by the fireplace, while it rains or snows lazily outside. As a good short and delicate drink wine, it is unbeatable at snack time, while we share a chat with our best friends and philosophize about the pleasures of life. In the restaurant it can be offered before or after lunch or dinner with the first appetizer or at the time of dessert and coffee.

1 Kg., per strain approximately.

VINIFICATION

Manual selection of overripe grapes of the Monastrell variety. Destemmed, fermentation for 3 weeks with frequent pumping over. End of fermentation with 16/18 degrees of alcohol and 30 grams of residual sugar. Racking and aging in 1,730-litre old American oak barrels for 50 years during which, as a result of evaporation in such a dry climate, the wine reaches a graduation of 22.50% alcohol without any pumping over, fortification or fortification.

PAIRING

Its aftertaste between fine woods and hints of dried fruit and walnut skin invite a pairing such as that of a Brownie, cookies, cakes, nougat ice cream, an almond cake or an assortment of highly cured blue and hard cheeses. It pairs perfectly with village pasta, almond and walnut cakes, mantecados, brandy rolls, sequillos, perusas and monoveras toñas and soft nougats and guirlaches.
The Fondillón is a highly recommended wine for an aperitif where the slightly sweet flavors contrast pleasantly with the salted fish and all kinds of almadraba, tuna roe, mojama, bonito, dried cod and of course with some fried almonds with coarse salt. The latest most avant-garde and daring pairings propose lobster, Norway lobsters, prawns and grilled shrimp with salt flakes.
